Has anyone ever smoked walleye at home?

Yes. It tasted just as good as the trout I smoke. I used brown sugar and salt to cure and smoked it with apple wood.

Bacon wrapped smoked walleye
Not bad, a little over cooked at 2 hrs.
Probably 1 hr at 225 is all that is needed.

2nd attempt. Put some jalapeno and onion under the bacon and sprinkled old bay on top. Smoked 1 hour. Was pretty good.

That's pretty with the jalapeno. It looks tasty, but then it's hard to go wrong with adding bacon.

Usually fish with a higher fat content are best on the smoker.
